Store cooking oil in a cool, dark place, tightly sealed. It can be kept for up to a year. Oils with a higher smoke point (like vegetable, canola, and peanut oil) generally have a longer shelf life than more delicate oils (like olive or flaxseed oil). Refrigeration can extend the shelf life of some oils but may cause them to become cloudy; they will return to normal at room temperature.
